Now offering grass finished beef quarters. Boxed directly at the butcher, these packages are known to us as "split halves". Sizes of quarters are dependent on animals size. Select the quarter that you would like from the inventory below.
Each quarter includes ground beef, roasts and steaks. Our standard cut sheet for these packages includes: Tenderloin (Filet), Ribeye, NY, Top Sirloin, Sirloin Tip, Blade Steak, Rump Roast, Cross Rib Roast, Chuck Roast, Brisket and Bones. Seasonally, we adjust our cut sheets and quarters may include stew meat, kebob meat, cube steaks, London broil or carne asada. Each quarter will contain either a flank steak or tri-tip roast, but not both. Quarters do not contain heart, liver, kidneys, osso bucco or tongue.
A typical quarter will be approximately 45% ground beef, 15% roasts, 5% bones and 35% steak and other cuts.
